After some consideration, we have decided to pull the entire little kitchenette out.    This project will end up serving two purposes.   First, it will be a sleeping quality accommodation bologna quarters.   Our truck is a Suburban.   With only four of us traveling (the two older kids never want to go anywhere with us anymore), the Suburban is more than large enough to contain any packing we need.   We are not in a place,  currently, where we will be doing a lot of toughing it .   So we won t be cooking in the RV ever.   And probably won t be eating in it much.  Either way, no need for a kitchen.   The oven, sink and fridge will be posting to eBay soon.
The second purpose of the project is a mobile office.   I work from home (or the car or the road  anywhere I can get an Internet signal).   This RV will eventually be parked at an RV Park near my kids school.   Where the kitchen is now, I ll be putting a small desk.
Along the same lines as the kitchen, we won t be needing a table.  So we will replace the convertible cushions with a normal mattress and just make it a permanent bed.  That covers quality accommodation bologna three people s sleeping arrangements.   The shelf above the table is a convertible twin sized bunk.  We will be keeping that for the fourth person.   Once we remodel some other parts, there should still be enough floor space for an emergency blow up mattress in case out son decides to join us.
This little closet will go completely.  As I mentioned, we won t need a large closet.   In order to open the space up a little, we will turn this area/space (which covers the wheel well) into a little bench. quality accommodation bologna   Across from the closet, the fridge will go and the area that it currently takes will be greatly reduced.  It will hold updated electrical plus a very small closet .  It will be flat on front (the door/opening will to around by the bed/table) so I will mount an LCD TV on a swivel mount.   We will place a very small college style fridge near/under the desk (where the kitchen is now).
Not pictured is the bathroom .   We will keep the toilet, but move it a little bit.   It will pretty much be just a I don t want to have to get up and go outside in the middle of the night type thing.   And a new, small sink will be added to wash hands.
With no kitchen, lighting, heating or fridge, we will forgo propane.   My wife has always been a little leary of propane anyway.  We will keep the 12V power.  Don t need it for the fridge and the odds of us ever going off the grid is pretty slim, but..   Who knows..   Currently, all AC power is 20A.   I ll upgrade that to 30A at least.   I ll add an air conditioner and will be running computer (at least one, maybe two) so will need the power.   I might even go for broke and upgrade to 50A.
